I have just watched yet another cooking programme – and they had a recipe for cinnamon icecream. It looked ok, but I think I have a better one (she said modestly!!)
225ml full fat milk
1 cinnamon stick
3 egg yolks
100g cinnamon sugar
1 tsp ground cinnamon
450ml double cream
1.) Add the milk to a pan together with the cinnamon stick and bring to the boil.
2.) Remove the cinnamon stick and set aside to cool.
3.) In a bowl, whisk together the yolks and sugar until lighter in colour, and then add the ground cinnamon.
4.) Strain the cooled (but not cold) milk over the egg mixture, whisking continuously to form the custard.
5.) Pour the custard mixture back into the pan and cook on a low heat for about 10 mins, stirring constantly until thickened.
6.) Allow the custard to cool slightly.
7.) Beat the cream in a large bowl until slightly thicker, then pour in the custard.
8.) Allow the mix to cool completely, before chilling in the fridge for 20 mintues. Then pour into a icecream tub and place in the frezzer until semi solid, remove from the freezer, stir the contents and freeze again until solid – or if you want an easier life, invest in an ice-cream maker!
Serve with home made apple pie, apple flan, apple crumble or serve on it’s own, with some slices of fresh apple. Yum yum!
