Champagne Minted Strawberries

This is a simple and quick celebration dessert for a special occasion.

Serves 4

3 cups strawberries
1/2 cup vanilla sugar
1oz fresh mint (chocolate mint is ideal)
1-1 1/2 cup champagne or sparkling white wine or sparkling white grape juice

1 Wash the strawberries and leave aside to drain for a few minutes.
2 Halve all the medium and large berries but leave a few small berries whole with hulls intact for presentation.
3 In a large bowl, carefully mix the Strawberries and sugar together, then cover the bowl and leave to stand in a cool place (but not in the fridge) for at least an hour.
4 Just before serving, remove mint leaves from their stalks.
5 Set aside 12 small leaves and shred the remainder into narrow strips.
6 Gently stir the strawberries and sugar mixture and then fold in the shredded mint.
7 Divide the minted strawberries mixtures between 4 serving bowls or cocktail glasses
8 Pour the champagne (or wine or juice) over strawberries, until covered.
9 Decorate each serving with 3 mint leaves.
