This is a quick and useful recipe, if you have loads of cherry tomatoes from your garden and you have to make a side dish in a hurry.
16 oz Cherry Tomatoes, halved
1 large spring onion finely sliced
2 oz pine nuts, toasted
2 tablespoons olive oil
2 tablespoons basil leaves, torn (not cut or chopped)
2 tablespoons of curly parsley, finely chopped
1 tablespoon of oregano, leaves left whole
lemon pepper to taste
1) Place all the ingredients, except the pine nuts, in a bowl
2) Stir the ingredients and chill for at least 30 minutes
3) Just before serving, sprinkle the toasted pine nuts over the salad.
