Black Forest Mud Cake

Hi folks, I’ve been away for a while, but I have have come up with some new recipes and hope you will enjoy this one. It is based on a Mississippi Mud Cake, so full of healthy (?) chocolate and sugar. Enjoy!

250g butter, chopped
150g dark chocolate, chopped
2 cups sugar
1 cup hot water
1 jar cherries with kirsch
1 ½ cups plain flour
¼ cup self-raising flour
¼ cup cocoa powder
2 eggs, lightly beaten

1. Grease a 23cm square slab pan, line base and paper
2. Combine butter, chocolate, sugar, water, cherries and kirsch in a double saucepan or in a heatproof bowl. Heat until chocolate has melted and is smooth. To save time you can use a microwave instead. Set aside to cool to lukewarm temperature.
3. Transfer mixture to a large bowl, stir in sifted flours and cocoa powder, then add eggs.
4. Pour into prepared pan and bake in a moderately slow oven for about 1¼ hours. Stand 10 minutes before turning on to wire rack to cool. Serve dusted with sifted icing sugar.

The finished result

Keeping time 5 days.

Serve with vanilla ice cream
