I’m starting a new series, where food can be created from 3 simple ingredients. First to start off with, is a fruity syrup which is lovely served with icecream, yogurt, pancakes, waffles, sponge cake or with other fresh fruit.
Pour the maple syrup into a saucepan together with the blueberries and bring to the boil. Reduce the heat, stir in the ground cinnamon and simmer for a couple of mintues so that the berries soften and begin to break up.

Alternatives: Try replacing the cinnamon with lavender or vanilla seeds and the blueberries with blackberries or raspberries. Should keep in the fridge for up to 2 weeks.
