Take 3 ingredients: Raspberry Coconut Pot

This is a quick dessert to make, idea after a heavy meal, or for a quick treat.  Could also be used as a simple Valentine’s Day pud, especially for weight watchers.

Ingredients:

(To serve 1)

4 teaspoons of thick coconut yogurt (greek organic if you can get it)

6 fresh raspberries

chocolate sprinkles

Method:

  1. In a mini ramekin or shot glass, place the yogurt and level off the top with the back of the spoon
  2. Carefully top off the yogurt with the raspberries
  3. Sprinkle the raspberries with chocolate sprinkles
  4. Chill in the fridge until ready to serve
