Spiced vanilla syrup recipe (inspired by Raymond Blanc)

I watched Raymond Blanc‘s show last night, and as usual was completely inspired. The vanilla syrup recipe was a standout for me, so I set to work in the kitchen and came up with this:  

6 whole vanilla pods, roughly chopped into 3 cm (1 inch) pieces
100ml (4oz) caster sugar
100ml (4 fl oz) water
1 tbsp ground cinnamon  


  1. Place the sugar and the water into a small pan and bring to a boil. Allow to cool slightly then add the chopped vanilla pods.
  2. Place the mix into a food processor or blender and blend until it becomes a purée.
  3. Stir in the ground cinnamon then store in an airtight jar in the fridge and use as required.

The syrup will keep for several months. When recipes call for vanilla essence try substituting with this. Also try swirled in yogurt, or cream for a quick simple dessert, or add to fresh berry fruits. Try using different spices other than cinnamon.
